成果の概要

2019年9月3～6日にインドのメガラヤ州シーロンで開催された国際学会14th International Symposium on Buckwheatに参加し、フードバリューチェーンプロジェクトにおいて実施された雑穀類の高付加価値化・高品質加工技術開発の取組みについて、2課題「New Approach for the making High-Rutin and Non-Bitter Product from Tartary Buckwheat (Fagopyrum tataricum Gaertn.) by Thermal expansion treatment with Denatured Rutinosidase」及び「Effects of fermentation on the rheological properties of composite dough with dehulled buckwheat grain and quality of the mantou」の口頭発表を行うとともに、世界各国から参集したソバ研究者・企業関係者らとソバの加工や活用に関する討議・意見交換を行った。
