Wash the unripe peaches, drain and pack in a jar. Dissolve salt in water to make 23% salt solution. Add the salt solution to the jar until it covers the peaches. Weigh down the peaches with a plastic bag containing 23% salt solution. Close the jar and leave it under shade for 5-7 days.
1. Serve with a mixture of sugar, salt and a little crushed chilli.
2. Soak the fermented Look tor in heavy syrup of 40? Brix overnight then remove from the syrup. It can be eaten as it is or after sundrying for 1-2 days.
