On November 9, 2024 (Sat), JIRCAS made its debut at the “Tsukuba Science Festival 2024” held at Tsukuba Capio, demonstrating puffing techniques using a popcorn machine to puff buckwheat (Fagopyrum esculentum), tartary buckwheat (F. tataricum), and rice (Koshihikari). The demonstration highlighted how nutritious foods can be produced using simple methods.
The event enjoyed good weather and was bustling with visitors throughout the day. The JIRCAS booth was so popular that there were times when people had to wait in line. Many visitors were fascinated by the sight of buckwheat and rice with husks popping in the machine, and many observed the process attentively. The puffed buckwheat and rice were lighter in texture and had a unique flavor compared to regular popcorn and were particularly popular with children.
Millets are expected to play a significant role in global food security due to their high nutritional value and adaptability to diverse environmental conditions. Through events like this, we hope to raise awareness and spark interest in global food issues.
