Several species of Caulerpa are consumed in Thailand especially in the southern provinces such as Trang, Krabi, Phuket, Satun, Songkhla. The following recipe is for a menu called "NAM PRICK YHAM" (chili sauce). Cook shrimp in boiling water, but do not discard the water when cooked. Ligtly toast the shrimp paste in a banana leaf or foil and then add it to the other ingredients. Add the sugar last and mix well. Add some of the water that the shrimp was cooked in and mix through the ingredients. Serve in a small bowl and eat with fresh vegetables and Caulerpa.

Ingredients: boiled shrimp 5-6, chili (or dried chili) 5-6, lime 2-3, sliced onion 1, Shrimp paste 1 tablespoon, sugar 1/4 teaspoon, shrimp boiling water
