Ingredients
Durian flesh: Durio zibethinus (Too-rian). Sugar, salt, bird chilli.
Fish normally used:
Fermentation: 2 days.
Storage life: 7 days.
Production: In home industry in the South.
Properties: Semi-solid, strong sulphurous smell, creamish yellow colour.
Microorganisms
Lactobacillus plantarum, Candida sp., Lactobacillus sp.
Method
1. Mix the flesh of the durian with about 7-8% of salt, about 3% of sugar and a small amount of crushed bird chilli if desired.
2. The mixed ingredients are packed in a bowl, covered with cloth and left under shade to ferment for 2 days.
Consumption
As a condiment.
